Description
I stopped rolling cabbage rolls! This version is so much better!
Classic cabbage rolls without all the rolling! Tender cabbage leaves are shaped into large domes and packed with juicy ground beef, rice, and a cheesy center. They bake in rich tomato sauce and are served with creamy garlic sour cream sauce. Easier to shape and loaded with more filling, this stuffed cabbage recipe is pure comfort food.

Total time:
About 2 hours, including prep, baking, and resting.
Servings:
Makes 6 large cabbage domes, enough for 4-6 people.
Customize it!
Regular green cabbage, also called white cabbage in some countries, works best. Choose a large head with intact outer leaves. A slightly looser head is easier to separate, but a firm cabbage works too - just boil the leaves until tender. Use ground beef, pork, turkey, or a mix. Any melting cheese works. Broth adds flavor, but water or cabbage water works too.

🛒 Ingredients:
For the Cabbage:
1 large green cabbage (white cabbage)
Salted water, for boiling
Oil, for the baking dish
For the Beef and Rice Filling:
~1 3/4 lb / 800 g ground beef
~2 cups / 360 g partially cooked rice, cooled
2 medium onions, diced
3 garlic cloves, minced
1 egg
1 tbsp / 15 g butter
A little oil, for cooking
1 tbsp Worcestershire sauce
1 tsp paprika
1/2 tsp smoked paprika
1/2 tsp dried thyme
1 tsp black pepper
1.5 tsp salt
Fresh parsley, leaves and stems separated
For the Cheese Center:
~1/2 cup / 60 g shredded Cheddar
~1 cup / 120 g shredded low-moisture Mozzarella
For the Tomato Sauce:
5 tbsp / 80 g tomato paste
Chopped parsley stems
1 tbsp oil
1 tsp garlic powder
1 tsp sugar, or as needed
~1 1/2 cups / 350-400 ml beef broth, water, or cabbage water
Salt and pepper to taste
For the Creamy White Sauce:
~3/4 cup / 200 g sour cream
1 garlic clove, minced or grated
Apple cider vinegar or lemon juice
1 tbsp mayonnaise
Milk or half-and-half, as needed
Salt and pepper to taste
For Serving:
Fresh parsley
📝 Quick Instructions:
Cabbage:
Cut out the core and place in boiling salted water. Remove the leaves as they soften. Keep 6 large leaves and extras for patching. Return them to the water and boil until tender; the thick part should be easy to pierce. Trim the thick stems so the leaves fold easily.
Filling:
Cook the onions in oil and butter until soft. Add garlic and thyme; cook for 30-40 seconds, then cool. Combine the beef, rice, egg, Worcestershire sauce, both paprikas, pepper, salt, onion mixture, and parsley leaves. Mix just until it holds together.
Shape:
Mix both cheeses. Line a small bowl, about 1 1/2 cups / 370 ml, with a cabbage leaf. Add filling, cheese, then more filling. Press firmly, fold the leaf over, and flip out the dome. Place seam side down in a greased dish. Repeat to make 6. Patch tears with extra cabbage.
Tomato sauce:
Mix the tomato paste, parsley stems, oil, garlic powder, sugar, salt, pepper, and broth until smooth. Taste and adjust; it should be balanced, not too sour. Pour over and around the domes.
White sauce:
Make it first if you like, so the flavors can blend. Mix the sour cream, garlic, vinegar or lemon juice, mayonnaise, salt, and pepper. Thin with milk or half-and-half until creamy. Cover and chill. It can be made up to 24 hours ahead.
Bake:
Cover tightly with damp parchment or foil. Bake at 375°F / 190°C for 45-50 minutes. Uncover, spoon sauce over each dome, and bake for 10-15 minutes more. Broil briefly if needed.
Rest and serve:
Rest for 10-15 minutes. Serve with both sauces and parsley.
If the cabbage is still firm:
Cover again. If the sauce looks thick, add a splash of broth or water. Bake for another 15-25 minutes, covered, until tender.
