Description
One pot, one oven, no chopping board full of onions you can't see to cut, no stirring while you stand there. These ten dinners come from the kitchens where one person cooked for eight, then for four, then for one — and kept the same clay pot. Everything goes in cold, the oven does the work, and you walk away. This is how Mexican cooking already worked before anybody called it a hack.
⭐ THE 10
0:00 One pot, no chopping, no standing
1:14 #10 Arroz con pollo: thighs, rice, a can of tomato
2:48 #9 Carne guisada: stew meat, potatoes, a jar of salsa
4:22 #8 Albóndigas al horno: frozen meatballs, tomato sauce, a handful of rice
5:51 #7 Calabacitas con carne molida: ground beef, zucchini, corn, no sauté
7:18 #6 Pollo en mole: thighs, a jar of mole, done
8:41 #5 Pork and hominy: shoulder, two cans of hominy, dried chiles
10:09 #4 Chicken and nopales: thighs, a jar of nopales, tomatillo salsa
11:33 #3 Beef and beans: chuck, a bag of pintos, onion powder, that's it
12:58 #2 Rajas con crema: poblano strips from a bag, chicken, Mexican crema
14:21 #1 Picadillo al horno: ground beef, potatoes, raisins, a can of tomato
15:47 The same pot, just you now
⭐ THE METHOD (same for all ten)
1. Heavy pot with a lid, oven-safe. Cast iron, a Dutch oven, or a lead-free clay olla.
2. Everything goes in cold, straight from the package or the bag. No browning, no sautéing the onions first, no layering.
3. Salt, then into a cold oven. Set it to 325°F and start the timer when the oven beeps that it's ready.
4. Walk away for 90 minutes to 2 hours. Don't open it. Don't stir.
5. When it's done, taste the broth and add salt or lime at the table.
WHY IT WORKS: the old cooks didn't stand at the stove because they loved it. They stood there because the burner runs hot and uneven and you have to watch it or it scorches. The oven holds one temperature from all sides for hours, and nothing sticks. Toss it in, walk away, eat when you're ready. My abuela cooked this way her whole life. The internet just gave it a different name.
THE HONEST WORDS (straight, like a shop estimate):
- These portions feed one for two or three nights, or freeze half in the broth.
- Meat straight from the fridge into the pot, yes. Frozen solid, no — thaw it first or it throws the time off.
- No browning means less color on the meat, but the same flavor once it's been in the pot two hours.
- Dried beans in a dump recipe: only if they got the ten-minute boil first. Otherwise use canned and pour off half the liquid.
- Can't lift a full Dutch oven: fill it on the oven rack pulled out, then slide it in.
- Arthritis in the hands: buy the vegetables already cut, the meatballs already rolled, the salsa already in the jar. It's the same food.
- Too much for one meal: these all freeze. Two-cup containers, label them, stack them. One cook day, a freezer full of dinners.
WHO PROFITS: the meal-kit companies charging seventeen dollars a serving for pre-portioned ingredients and a card that says dump and bake. A pot, a bag of rice, a package of thighs, and a can of tomato cost five dollars and feed you three times.
THE HABIT: one pot on Sunday or Monday. Eat straight from it that night. The next two nights, reheat a bowl. Clean the pot once. If you only cook one day a week, make it count, and make enough that the pot works for you the other six.
And the car that got you to the carnicería for those thighs? That's the other half of my life: 🔧 Carlos Herrera → https://www.youtube.com/@CarlosHerreraYT
Pick one this week. If you only make two: the arroz con pollo, and the pork and hominy. Then tell me in the comments what your abuela or your tía kept on the stove in one pot all week, and whether you're still making it. I read every one.
