Description
When you live alone, the hard part of cooking was never the cooking. It is standing at the sink afterwards, looking at what you have to wash, when you are tired and you already ate. Tonight there is one pan, and it fits in one hand. Ten hot dinners on a small sheet pan — sausage with peppers and onions, chicken thighs that crisp over the potatoes, baked cod with cherry tomatoes that make their own sauce, and honey glazed drumsticks that come out shining. Stay with me for number nine: it goes into a cold oven and it is ready in eight minutes.

🍽️ FULL RECIPES (1-2 servings)
1. SAUSAGE, PEPPERS AND ONIONS
2 sausages • 1 bell pepper • ½ onion • 1 tbsp oil • salt & pepper. 400°F, 25 minutes.
👉 Secret: lay the sausages ON TOP of the vegetables — the fat runs down and seasons everything underneath. Cut the pepper and onion BIG; small pieces dry out before the sausage is done.
2. CHICKEN THIGHS WITH POTATOES
2 chicken thighs, bone in • 2 potatoes • 1 tbsp oil • salt, pepper, a little paprika. 425°F, 40 minutes.
👉 Secret: skin side UP the whole time — turn it once and it goes soft and never comes back. Potatoes to the sides, thighs in the middle, touching them. No thighs? Drumsticks work the same.
3. BAKED COD WITH CHERRY TOMATOES
1 cod fillet • a handful of cherry tomatoes • 1 tbsp olive oil • 1 clove garlic • salt & pepper. 400°F, 12 minutes.
👉 Secret: leave the tomatoes WHOLE — a cut tomato gives up its juice in the first two minutes and dries out. Take the fish out the moment it flakes under a fork; white fish carries on cooking on a hot pan.
4. SALMON WITH GREEN BEANS
1 salmon fillet • 2 handfuls green beans • 1 tbsp oil • ½ lemon • salt & pepper. 400°F: beans 10 minutes alone, then 12 minutes with the salmon.
👉 Secret: the beans get a HEAD START — they want twenty minutes, salmon wants twelve. Bake UNCOVERED; foil would steam it soft. Lemon at the end.
5. MEATBALLS WITH BABY POTATOES
8 FROZEN meatballs • 10 baby potatoes • 1 tbsp oil • salt & pepper • a little dried oregano. 400°F: potatoes 20 minutes alone, then 20 minutes more.
👉 Secret: the potatoes go in WHOLE with the skins on — nothing to peel and nothing to cut. Add the meatballs STILL FROZEN; thawed ones fall apart on a hot pan and leak their juice.
6. HAM STEAK WITH SWEET POTATO
1 ham steak • 1 sweet potato • 1 tbsp oil • black pepper. 400°F: rounds 20 minutes, then 10 minutes with the ham on top.
👉 Secret: cut the sweet potato into rounds the WIDTH OF YOUR FINGER — thin slices go leathery before the middle softens. NO SALT: the ham carries all of it.
7. PORK CHOP WITH APPLE SLICES
1 pork chop • 1 apple • 1 tbsp oil • salt, pepper, a pinch of dried sage. 400°F, 25 minutes.
👉 Secret: leave the apple SKIN ON — it holds the wedge together, and without it you get apple sauce on your pan. Sit the chop touching the apple: the steam beside it keeps a lean chop from going tight.
8. CHICKEN TENDERS WITH BROCCOLI
4 chicken tenders • a handful of broccoli florets • 1 tbsp oil • salt, pepper, garlic powder. 425°F, 15 minutes, nothing needs turning.
👉 Secret: broccoli to the EDGES, tenders in the MIDDLE — the edges of the pan run hotter and that is where broccoli browns properly. Leave space between the pieces; anything touching will steam instead of roast.
9. SHRIMP WITH LEMON AND BUTTER ⭐ a handful of FROZEN peeled shrimp • 1 tbsp butter • ½ lemon • salt, pepper, a pinch of parsley. Into a COLD oven, turn it to 400°F, 8 minutes.
👉 Secret: the cold start is the whole trick — a hot oven takes shrimp past done in ninety seconds. Watch the shape, not the clock: a loose C is cooked, a tight O is overcooked.
10. CHICKEN DRUMSTICKS WITH HONEY GLAZE
4 chicken drumsticks • 2 tbsp honey • 1 tbsp soy sauce • 1 tbsp oil • salt & pepper. 400°F, 35 minutes, then glaze and 5 minutes more.
👉 Secret: LINE THE PAN WITH FOIL — honey is the only real mess in this video, and foil lifts straight off. Glaze at the END only: sugar burns in about ten minutes.
All ten are made for one or two on a small sheet pan. Cook the second portion and it keeps for tomorrow.
