Description
How Much Wine Did Ancient Romans Actually Drink?
The average adult Roman drank close to a bottle of wine a day — and Rome was terrified of drinking. This is the real story of wine in ancient Rome.
In 186 BCE, the Roman Senate passed a decree regulating a wine cult — the worship of Bacchus — with executions attached. Rome took drinking seriously enough to legislate it. Wine was the daily staple of every social class: from the legendary Falernian vintage reserved for the elite, to lora (pressed grape skins) given to enslaved workers, to posca (sour wine and water) carried by Roman soldiers.
And the famous explanation — "they drank wine because the water was unsafe" — doesn't hold up for the city itself. Rome's eleven aqueducts delivered some of the cleanest water in the pre-modern world. Roman writers argued about which aqueduct tasted best, the way people argue about bottled water.
What follows is stranger. Romans almost never drank wine straight: drinking merum — undiluted wine — was the mark of a barbarian, or of a man who had lost control. At a proper Roman banquet, a "master of the drinking" (magister bibendi) was elected — sometimes by a throw of dice — to set the water-to-wine ratio for the entire table. The ritual wasn't about taste. It was about control.
That same anxiety runs everywhere. The stories about Roman women being executed for drinking wine are legend — what the sources really reveal is a fear of female self-control. In politics, calling a rival a drunk was a standard attack, because self-mastery was the core Roman virtue. And in the kitchen, wine was sweetened with grape syrup boiled in lead vessels — exposing the wealthiest Romans to a slow poison they never suspected.
Seneca summed up the whole Roman problem: drunkenness doesn't create our vices — it takes away the mask. And Rome ran on masks.
