Description
A 91-year-old woman cooked eggs the same way every morning for six decades. One teaspoon of oil, three drops of water mixed with mirin, a tight lid, and 90 seconds of patience.
📖 The book I mention in the video — What She Cooked Behind a Long, Healthy Life: https://kitchen.myreads.store
No flip, no splatter, no rubbery edges. She learned it in 1947 during rationing in rural Niigata when oil was limited to two tablespoons per family per week and every egg mattered.
The Western method uses two or three tablespoons of oil at 350°F to 400°F. The whites turn stiff in 90 seconds, edges brown and crisp while centers stay raw, then you flip and break the yolk half the time. Steam-frying uses trapped heat from above and below at the same time. The bottom cooks from contact, the top cooks from wet steam. The white sets evenly with no raw spots, the yolk stays soft and liquid, and the edges never crisp.
Three refinements make it better. Salt goes in the oil before the egg so it seasons from underneath. Crack into a small bowl first so you can remove shell fragments and slide it in gently. Tilt the pan toward you for ten seconds after covering so the white pools and sets faster at the lower edge. One bottle of mirin costs around $6 and lasts four months. Over a year this method saves seven liters of oil and keeps oxidized compounds out of your body.
