Description

If your zucchini always turns out soggy, greasy, or bland, frying harder is not going to fix it. The part that actually gives zucchine alla scapece its flavor is not the oil at all — it is what happens before the pan, and what you pour over the zucchini while they are still hot. I grew up watching this dish made the old way, with zucchini going straight into hot oil. But over the years I learned that you can get a lighter, sweeter result without deep-frying at all, as long as you treat the zucchini properly first and let the vinegar, garlic, and mint do the real work. In this video I show you exactly how I make zucchine alla scapece now: choosing firm medium zucchini, slicing them evenly, salting them for 20 minutes to draw out excess water, drying them properly so they sear instead of steam, cooking them in a very hot pan with almost no oil, and then dressing them while they are still warm so they absorb the vinegar, garlic, and mint all the way through. I’ll also show you how to fix the most common problems — soggy zucchini, a marinade that tastes too sour, flat flavor, garlic that is too harsh, and slices that fall apart — plus why this dish actually tastes better after it has rested overnight. Make a large batch and keep it in the fridge for the next few days. Serve it at room temperature with bread, grilled fish, or a little soft cheese, and let the marinade keep doing its work. Tell me in the comments: do you still fry your zucchini for scapece, or would you try it this way?
