Description
Nearly every morning I cut the richest piece off a salmon, and it sells for about half what the fillet does. Almost nobody asks for it. Meanwhile the farmed fillet at Costco runs twelve to fourteen dollars a pound.
You are not paying for the fish. You are paying for trust. Salmon is the one fish people buy without asking a single question, so the price sits high and it still moves.
For forty years I have sold fish in Seattle, the last twenty running my own counter.
Here is what that does to the price: the fish nobody asks for, nobody fights over. I went through the actual listings at Costco, Walmart, Kroger, H Mart and the Asian grocery delivery sites, and every price in this video is one I found posted.
Seven, smelt under four dollars a pound at the Asian grocery sites. Six, mullet at around four dollars a pound in Florida. Five, butterfish at about four and a half dollars a pound, and how to tell it from escolar. Four, Pacific saury at about two and a quarter a pound. Three, whole rainbow trout at three seventy-nine to four forty-nine a pound. Two, whole frozen herring at four ninety-nine with about four fifths of the omega-threes of farmed salmon. One, the salmon collar, the richest cut on the fish.
Also in this one: the exact words to say at the counter for every fish, the fish sold as butterfish that can wreck your night, the black belly lining that makes mullet taste muddy, the one swap that saves more than four hundred dollars a year, and when I would still tell you to buy the salmon.
