Description
Forgotten dinner pies from the nineteen sixties, when American mothers put a pie on the table without ever touching a rolling pin. A batter poured over the top made its own crust as it baked. Ten easy meals for seniors, no pastry to roll and nothing to patch.

🍽️ FULL RECIPES
1. CHICKEN AND CABBAGE POUR-OVER PIE
2 cups bagged coleslaw mix • 1½ cups cooked chicken • 1 cup baking mix • 1 cup milk • 2 eggs. Cabbage and chicken in a buttered dish, batter over, 375 for 35 minutes.
👉 baking mix or self-rising flour, never plain. The batter has to lift as it bakes.
↔️ No chicken, a drained can of tuna. No coleslaw mix, half a cabbage sliced thin.
2. HAM AND EGG CRUSTLESS QUICHE PIE
4 eggs • 1 cup milk • 1 cup diced ham • 1 cup cheddar • ¼ cup baking mix. Ham and cheese in the dish, beat the rest smooth, pour over, 350 for 35 to 40 minutes.
👉 that quarter cup of baking mix is what lets it hold a slice.
↔️ No ham, cooked bacon. No milk, evaporated milk thinned with water sets firmer.
3. CHEESY BROCCOLI AND RICE PIE
2 cups cooked rice • 1½ cups frozen broccoli • 1 cup cheddar • 1 cup milk • 2 eggs • ¼ cup baking mix. Rice down, broccoli over, half the cheese, batter, rest of the cheese. 350 for 40 minutes.
👉 put the broccoli in frozen. Thawed, it gives up its water and you get a wet pie.
↔️ No cooked rice, a microwave pouch. No broccoli, frozen cauliflower or peas.
4. SALMON AND CORN PIE
1 can salmon, drained • 1 can sweet corn, drained • 1 cup baking mix • 1 cup milk • 2 eggs. Flake the salmon into the dish, corn over it, batter over that. 375 for 35 minutes.
👉 leave the soft little bones in. They break down completely.
↔️ No salmon, canned tuna or chicken. No corn, a cup of frozen peas.
5. TOMATO AND CHEDDAR PIE
3 ripe tomatoes, sliced thick • 1½ cups sharp cheddar • 1 cup baking mix • ¾ cup milk • 2 eggs. Tomato in one layer, cheese over, batter over that. 375 for 40 minutes.
👉 salt the slices and let them sit ten minutes. That water is what makes it slice instead of run.
↔️ No fresh tomatoes, a drained can patted dry. No sharp cheddar, any strong cheese.
6. SAUSAGE AND ONION TOAD-IN-THE-HOLE PIE
6 small sausages • 1 cup baking mix • 1 cup milk • 2 eggs • frozen sliced onion • a spoon of oil. Sausages and onion in oil, 400 for 15 minutes, then batter around them, 25 more.
👉 the dish must be hot when the batter goes in. Into a cold dish it makes a flat pancake.
↔️ No sausages, smoked sausage cut into lengths. No baking mix, plain flour works here.
7. TUNA AND PEA PIE
2 cans tuna, drained • 1 cup frozen peas • 1 cup baking mix • 1 cup milk • 2 eggs • shredded cheese. Tuna flaked in, peas over, batter, cheese on top. 375 for 35 minutes.
👉 buy tuna packed in oil, not water. Water packed is drier and the oven takes the rest.
↔️ No tuna, canned salmon or chicken. No cheese on top, breadcrumbs brown just as well.
8. BACON AND CHEESE IMPOSSIBLE PIE
6 slices bacon, cooked • 1½ cups shredded cheese • 1 cup baking mix • 1½ cups milk • 3 eggs. Bacon and cheese in the dish, whisk the rest, pour over. 400 for 30 minutes.
👉 whisk right down to the bottom. The heavy mix sinks, and what sinks forms the layer underneath.
↔️ No bacon, chopped ham or leftover sausage. This one takes whatever you have.
9. CHICKEN POT PIE WITH A BISCUIT TOP
2 cups cooked chicken • 1 can cream of chicken soup • 1½ cups frozen mixed vegetables • 1 cup baking mix • ⅓ cup milk. Stir the filling in the dish, drop the dough over in six spoonfuls. 400 for 25 minutes.
👉 leave gaps between the spoonfuls. Steam has to come up, or the underside stays raw.
↔️ No cream of chicken soup, cream of mushroom or celery.
10. IMPOSSIBLE CHEESEBURGER PIE
½ lb ground beef • frozen chopped onion • 1½ cups cheddar • 1 cup baking mix • 1 cup milk • 2 eggs. Brown the beef with the onion, into the dish, half the cheese, batter, rest on top. 400, 25 minutes.
👉 leave the fat in the pan when you tip the beef out. The batter absorbs it.
↔️ No ground beef, ground turkey. No frozen onion, onion powder if chopping is hard.
