Description

#soulfood #blackcooking #idabell Hey y'all today im showing you one of my favorite recipies. RED BEANS AND RICE 1 lb dried red kidney beans (picked, rinsed, soaked overnight optional) 1 large onion, diced 2 stalks celery, diced 1 green bell pepper, diced 4 cloves garlic, minced 1 smoked ham hock (or pickled pork) 2 bay leaves 1 tsp salt (adjust to taste) Black pepper and cayenne to taste 2 tbsp oil or bacon fat Optional: 1 lb andouille sausage, sliced (add last hour) Long grain white rice for serving Saute trinity 8-10 min until onion is soft. Add garlic 1 min. Add beans, ham hock, water (2 inches above beans), bay leaves, salt. Boil, reduce to low simmer. At 1.5 hours, mash 1/3 of beans against pot with wooden spoon. Simmer another 1-1.5 hours, stirring every 15-20 min. Pull ham hock, shred meat, return to pot. Remove bay leaves. Serve over long grain white rice. Yield: 8-10 servings Cost: ~$4-5 per pot Cook time: 3-5 hours (depending on soak) NOTE: The mash is the secret. It creates the cream. Day 2 leftovers are thicker and better.
