Just PRESS potatoes and add ground beef! My family begs for these crispy cups!
Press boiled potatoes into a muffin pan and turn them into crispy golden potato cups! This is easy comfort food at its best - a hearty potato and beef dinner the whole family will love.

Total time:
About 1 hour 15 min. Roughly 30 min prep, 20-30 min pre-bake, 10-15 min final bake, plus resting.
Servings:
Makes 6 potato cups, enough for 3-4 people.
Customize it!
Use ground beef, pork, turkey, chicken or a mix. Any good melting cheese works - Gouda, Cheddar, Mozzarella or Monterey Jack. Want more heat? Add extra chili flakes. No bell pepper? Swap in mushrooms or extra onion. The potato cups are the star - fill them with whatever hearty filling you love. A spoonful of sour cream on top makes them extra cozy.

🛒 Ingredients:
For the Potato Cups:
Standard 6-cup muffin pan (each ~2 x 1.25 in / 5 x 3.2 cm)
3-5 medium potatoes
Oil, for brushing the pan and glass
2 tbsp melted butter
1 tbsp olive oil
~1 tsp smoked paprika
~1 tsp garlic powder
Salt and pepper to taste
For the Beef Filling:
~1 lb / 500 g ground beef
1 onion, diced
1 bell pepper, diced
2-3 garlic cloves, minced
1 tbsp tomato paste
1/2 tsp dried thyme
1/2 tsp chili flakes
~1/2 cup / 100 ml beef stock or water
2 tbsp Worcestershire sauce
1 tsp Dijon mustard
A knob of butter, for cooking
Fresh parsley, chopped
Salt and pepper to taste
For the Top:
~3.5 oz / 100 g Gouda (or any melting cheese)
Dried oregano
📝 Quick Instructions:
Potatoes:
Cut the potatoes in half, cover with water, salt well and boil until tender. Drain and let them steam dry, then let them cool until they're comfortable to handle. Brush a muffin pan with oil and place the potatoes skin side down. Brush a sturdy glass with oil and press each one gently into a cup. Shape the walls and even out the rim. Boil a few extra to patch any thin spots.
Season:
Mix melted butter, olive oil, smoked paprika, garlic powder, salt and pepper. Brush the cups all over, sides and rim too. Pre-bake at 400°F / 200°C for 20-30 minutes until golden and crisp.
Beef:
Brown the ground beef in a hot skillet, season with salt and pepper, then transfer to a bowl. In the same pan, cook the onion in butter until soft. Add the bell pepper and cook until softened. Stir in garlic, tomato paste, thyme and chili flakes. Cook 30-40 seconds until fragrant. Return the beef, add stock, Worcestershire sauce and Dijon mustard. Simmer until thick. Stir in fresh parsley off the heat. For a filling that holds together better, mix in a handful of shredded cheese while it's hot.
Assemble and bake:
Fill each pre-baked cup generously and press the filling in. Top with cheese and a sprinkle of oregano. Bake for 10-15 minutes until the cheese is bubbly and golden.
Rest and serve:
Let them rest for 10-15 minutes so they set and lift out easily. Serve with a spoonful of sour cream and a fresh side salad - the sour cream makes them even better.
