Description

A bag of pinto beans five years old can boil all day and never go soft, and most of the stock-up advice folks follow before winter wastes more than it saves. Grandma Ida's cellar up a Kentucky holler was never a bunker, and I'll tell you what it was really for. Ten keeping foods go on my shelf before the first frost, each with how long it truly lasts, and five so-called bargains I wouldn't spend a dime on, the last one costing folks the most. There's a freezer trick that kills weevils in a new sack of flour, a smell test for turned cornmeal and fat, the one rule for bulging tins and seam dents, and the reason my year's flour and sugar come home in the weeks before Thanksgiving. The free Pantry List, The Thirty Foods That Keep for Years, is in the pinned comment too, so stick it inside a cupboard door. THE RECIPES Mama's Salmon Patties (makes 6) Ingredients: - 1 can salmon, 14 to 15 ounces - 2 tablespoons liquid from the can - 1 egg - 1/2 cup cracker crumbs - 1/4 cup grated onion - 2 tablespoons flour - 1/2 teaspoon black pepper - Grease for frying, about 1/4 inch deep Steps: 1. Drain the salmon and save 2 tablespoons of the liquid. 2. Pick out the big pieces of skin. Mash the fish, bones and all, until the little bones mash to nothing. 3. Stir in the egg, cracker crumbs, onion, flour, pepper and the saved liquid. 4. Let the mixture stand 5 minutes. 5. Pack into 6 patties, 1/2 inch thick. 6. Heat 1/4 inch of grease in a skillet over medium heat. 7. Fry the patties 4 minutes a side, and don't move them while they cook.
