Description

In this video I cover thirty-one things I have learned over twenty-five years of making Japanese stir-fry for my family of seven, from the prep that decides everything before the pan is hot, to the exact order you add ingredients so nothing comes out soft or watery, to the sauce that goes on at the very last minute. You will see the trick of freezing pork for paper-thin slices, why you do not need a wok to get that crisp sear at home, the one starch that gives your meat a restaurant-style glaze, and the curry powder note that most Western versions of yakisoba leave out. I also show how to build your own yakisoba sauce from everyday ingredients and why you always make a double batch. Every one of these habits I have tested in my own kitchen, and they all serve the same end: a stir-fry that comes out bright and crisp, not sad and soggy, every single time.
