Description

Most People Are Cooking Pinto Beans Wrong! Try These Appalachian Tricks for Perfect Soup Beans Half of what you were taught about soup beans is backwards. Not your fault, honey. It came down through the family like a ring that turned out to be glass. If your pintos stay hard after five hours, split to mush, or come out bland in salty likker, these seven old mountain tricks fix it. Every one is free and none takes extra time. This is how Mommy cooked them up the holler in Harlan County, in a black cast-iron Dutch oven that never left the woodstove. 🫘 THE 7 TRICKS, WRITTEN DOWN SO YOU CAN KEEP THEM Salt at the start, not the end. One tablespoon in the pot with everything else. Salt at the end only seasons the likker, never the bean. Hard beans are old beans. If they won’t soften after four hours, the bag sat on a shelf too long. Buy where beans sell fast. The soak is optional. Soaking saves about an hour. Unsoaked pintos make a richer likker. Forgot? Cook them anyway. Sour waits. No tomato, vinegar, or chowchow in the pot. Acid keeps beans hard. Add it at the table. The pot whispers, it never boils. The lowest gentle simmer, lid cracked. A hard boil turns the pot to mush. Fat goes in the water. A ham hock, a chunk of fatback, or a spoon of bacon grease, right in at the start. Never pour out the pot likker. Store and freeze your beans in it. It is the most valuable thing in the pot. 📜 The whole law in six words: Salt goes first. Sour goes last. 🧅 What else goes in the pot: half an onion in one piece, three whole garlic cloves, a dried hot pepper pod if you like a bite, and summer savory in the last half hour (a bay leaf works too). Black pepper at the bowl. 🍽️ One pot on Sunday, five suppers: Sunday: soup beans and cornbread with raw onion Monday: fried bean cakes Tuesday: beans and taters with chowchow Wednesday: chili Thursday: bean soup with all that likker 🌽 Next time in this kitchen: real skillet cornbread, no sugar, with the grease test and the flip that keeps the crust whole. 💬 Tell me in the comments: what county are you from, and were you taught the salt-at-the-end rule too? I want to see how far that piece of glass traveled. #SoupBeans #PintoBeans #AppalachianCooking #SouthernCooking #OldFashionedCooking #MountainCooking #CastIron #FrugalCooking #CookingFromScratch #ZebCombs
