Description

Ask any Puerto Rican family what December smells like and the answer is pasteles - and somebody's mother asleep at the table before midnight. Somewhere along the way a scheduling accident became a tradition: everything bought at once, masa ground in one day, filling cooked the next, wrapping until two in the morning. The pastel never asked for that. It asked for time, and time is the one thing nobody gave it. This plan gives it back. October is leaves and a list. November is the masa one weekend and the relleno the next. Early December is one assembly day in a family line, and from there to Nochebuena the freezer holds the rows. The only job that waits for the day is the pot. In this video: WHAT THE PLAN COVERS 1.Why almost every stage of a pastel survives the freezer. 2.The October shopping list and the leaf prep that makes folding easy. 3.The masa base - green bananas, yautia and the blend your family defends. 4.Homemade achiote oil in ten minutes, and the two rules that keep it right. 5.The relleno that freezes flat, cooled and labeled like a library. 6.Assembly day as a four-station family line - leaf, masa, relleno, fold and tie in pairs. 7.The four batch failures and how each one gets fixed. 8.How to serve pasteles on Nochebuena straight from the freezer to the pot. Which job are you claiming for October - the leaves or the list?
