Sticky Date Cake that melts in your mouth! 🤎🍰 This easy date cake recipe is incredibly soft, moist and full of rich date flavour, with crunchy walnuts and a warm homemade toffee sauce soaked right into the cake. The dates are softened with warm tea for an extra-tender crumb, while the cinnamon, brown sugar and toffee sauce give this cake a warm, comforting flavour. Plain flour – 150g (1 cup) Baking powder – 1 teaspoon Baking soda – ⅓ teaspoon Ground cinnamon – 1 teaspoon Brown sugar – 75g (¼ cup + 2 tablespoons) Salted butter – 110g, melted Eggs – 3 Walnuts – 50g (⅓ cup), chopped Vanilla extract – 1 teaspoon You can use another type of nut instead of walnuts if preferred. For the Homemade Toffee Sauce Brown sugar – 75g (¼ cup + 2 tablespoons) Butter – 55g (¼ cup) Heavy cream – 120ml (½ cup) Equipment Measuring cup size: 240ml Baking pan: 20 × 20cm (8 × 8 inch) Bake in a preheated oven at 170°C (350°F) for approximately 35–40 minutes. Method Prepare the Date Mixture Add the finely chopped dates to a bowl. Pour over the warm tea and add the baking soda. Mix well and set aside while you prepare the cake batter. Make the Date & Walnut Cake Add the plain flour, baking powder, cinnamon and brown sugar to a large mixing bowl. Mix well to combine. Add the melted butter, eggs, prepared date mixture, chopped walnuts and vanilla extract. Whisk on low speed for about 20 seconds, just until the ingredients are mostly combined.
