Description
Stop paying $20+ a pound for ribeyes when you can get the exact same muscle for a third of the price! In this video, we go back to the basics with a butcher shop secret passed down by an old master named Ray. We take a single, 17 lb whole boneless chuck roll (bought for roughly $55) and seam-cut it into over 20 tender, steakhouse-quality cuts—including Chuck Eye, Denver, Flat Iron, and Country steaks.
Stick around until the end where we put a $3/lb chuck eye steak head-to-head against a $22/lb Prime Ribeye in a blind taste test in front of a certified BBQ judge!
🔥 MY THREE RULES OF BBQ:
Buy it cheap.
Burn it clean.
Give it time.
🎯 WHAT YOU WILL LEARN IN THIS VIDEO:
Why Ribeye is So Expensive: Understanding beef anatomy, scarcity, and where the "chuck line" is drawn.
What to Ask Your Butcher For: How to order a whole boneless chuck roll (or chuck eye roll) in the US and UK.
Seam Butchery Basics: How to use natural membranes to break down large primal cuts without wasting meat.
The Cuts You Get:
Chuck Eye Steak: The "poor man’s ribeye" (Crown Jewel).
Denver Steak: Intensely marbled and incredibly tender.
Flat Iron / Feather Blade: The 2nd most tender muscle on the whole animal.
Country Steaks: Perfect for marinades and high-heat fajitas.
Grilling & Temperature Guide: Mastering two-zone fire cooking and internal temps for absolute tender results.
