Description
Everything I know, written down:
A customer sets a warehouse club bag of shrimp on my counter and asks if my shrimp is worth the price difference. Nice person. Just trying to figure out if they're being played. I know something they don't. I know what that bag weighs when it's shrimp and what it weighs when it's not.
Shrimp is sold by the pound, but the pound on the label is not all shrimp. Some of it is ice glaze, some of it is a salt solution the shrimp got dipped in before freezing, and water weighs, and you pay by the pound.
For forty years I've sold fish in this city, the last twenty running my own counter on the water in Seattle.
Here is what that bag is hiding from you: a sodium tripolyphosphate soak that adds weight and water, a count number printed before the soak fattened the shrimp so the size runs smaller than the bag claims, a puddle in your bowl after thawing that's shrimp money spent on salt water, and a soaked shrimp that steams instead of sears and turns rubbery in the pan no matter what you do.
Also in this one: the small plain bag with exactly one word on the ingredient list, why that boring four dollar bag beats the big glossy one on true cost per pound, the right way to thaw shrimp overnight in the fridge or under cold running water, why you should never thaw shrimp on the counter, and the wild versus farmed question I get asked every week.
The books, the label breakdown, all of it:
