Description
📖 These bean tricks written down with the measures: https://vernasbook.com so you're not guessing at the stove. My printed cookbook ships to your door!
You're sitting in the third pew on a Sunday morning and your stomach starts telling the whole row what you had for supper. After the last video, many of you asked what about canned beans. So here are seven more secrets to cooking beans, the ones I should have told you the first time. One is sitting on a drugstore shelf most folks walk right past, and number one is what the screen door at half past six meant in my mother's house.
🥄 THE SEVEN
7. The can: pour into a strainer, rinse a full minute, never pour the liquid in the pot. Simmer 15 minutes in fresh water with half an onion, a bay leaf, and a spoon of bacon grease (mash a spoonful to thicken, page 57).
6. Start small: half a cup a day for a week or two, then a bigger bowl.
5. Cook them gentle and all the way: a bare simmer, not a hard boil (page 56; dried red kidney beans get a hard 10-minute boil first). A bean should squash between your thumb and finger. Test five. Beans that never soften were old (page 53).
4. A bay leaf in the pot from the start. It is tradition, not proof.
3. Put the spoon down between bites.
2. The drugstore enzyme (alpha-galactosidase): with the first bite, never in the pot. Ask your doctor or pharmacist first, especially with the diabetes pills acarbose or miglitol, or with galactosemia.
1. A ten-minute walk after supper, before the dishes. My mother called it letting supper settle.
📚 WHAT I READ: Winham and Hutchins, "Perceptions of flatulence from bean consumption among adults in 3 feeding studies," Nutrition Journal, 2011. Adults ate a half cup of beans a day for 8 to 12 weeks, and 3 to 11 percent reported more gas, including people on the control diets. The enzyme trial I mention was small, with 8 healthy volunteers.
🔥 A FEW HONEST WORDS: gas from beans is common and not dangerous, but pain that will not ease, a belly that stays swollen for days, blood in the stool, or weight loss without trying is a job for your doctor. I am a cook, not a doctor.
If this saves you a Sunday in the third pew, I would take a subscribe as a personal kindness. It costs you nothing and it helps me keep making these for you.
Have a blessed day.
