Japanese autumn freezer prep — 12 cheap staples, stocked right.
Every autumn I fill my freezer before the first frost, buying at September prices and eating well through February. Blanching corn, freezing whole tomatoes, olive-oil herb cubes, apple pie kits, frozen eggs, shredded cheese, flat-packed ground beef, broth from chicken bones, nuts and butter bought at the holiday sales. Freeze it right, and nothing tastes of the bag.
RECIPE & EXACT AMOUNTS — 19:20
Sweet corn: 6 liters boiling water, 4 min; then 4 min in iced water; cut kernels, bag flat.
Peppers: diced, single layer on a baking sheet about 2 h, then bagged; use ½ cup at a time.
Tomatoes: washed, stem spot out, frozen whole; 10 s under warm water to peel.
Zucchini: shredded, 2 cups packed (about 250 g) per bag, frozen flat; squeeze dry after thawing.
Herbs: ice-cube wells ⅔ full (about 1 level tbsp) + 1 tbsp (15 ml) olive oil per cube; freeze overnight.
Apples: 1 min in 1 liter cold water + 2 level tbsp (30 ml) lemon juice. Pie kit = 1 kg slices + 150 g sugar + 1 level tsp cinnamon, one bag.
Water jugs: filled to the shoulder, in every gap.
Eggs: whisked + ¼ level tsp fine salt per 4 eggs (for cooking); 1 egg per muffin cup; thaw overnight in the fridge.
Cheese: shredded + 1 level tbsp (about 8 g) cornstarch per 500 g; bagged flat.
Chicken broth: saved bones + 3 liters cold water + 1 onion halved; gentle simmer 3 h.
Ground beef: 1 lb (450 g) per bag, pressed flat as a paperback, air squeezed out.
Nuts, chocolate chips, baking supplies: freezer, a year or more.
Butter: in its box, inside a bag, the better part of a year.
