Description

Most people fry an egg the way their parents did. Hot pan, crack it in, wait, then flip it or spoon fat over the top. What comes out has a crisp brown edge, a yolk that's raw or hard, and a patch of translucent white beside the yolk that never quite sets. An egg is two foods in one shell and they set at different temperatures. The thick white beside the yolk is the part a hot dry pan never reaches. The Japanese method uses a lid and a tablespoon of water. The water turns to steam, the lid traps it, and the top of the egg cooks gently at the same time as the bottom. The white sets completely, the yolk stays liquid, and nothing goes brown. In this video: the method step by step, how much water, watching the white instead of a clock, and the version for a firmer yolk. Plus tamagoyaki, onsen eggs, and egg on rice. On raw egg on rice: Japan produces eggs under a system designed for it. Elsewhere, including the US, use pasteurised eggs. 📗 The Japanese Home Method. I suspect this one's divided. #eggs #friedegg #japanesecooking #breakfast #cookingtips #tamagoyaki #japanesehome #kitchenhacks #homecooking #eggsafety
