Description
Your caramel slides right off the apple and pools at the bottom? Honey, it's not your fault. There's a wax on every grocery store apple that nobody tells you about. Today I'm sharing five old tricks from my mother's kitchen for caramel apples that come out shiny, stay put, and look like the ones in the candy shop window, for about a dollar each.
I'll also read you Mother's handwritten caramel card from her old red recipe tin. All it says is "cook till it's right," so I'll tell you exactly what "right" means.
🍎 THE 5 TRICKS
Get the wax off: dip each apple in just-boiled water for 10 seconds, then rub it dry with a towel.
Dry and at room temperature: cold apples "sweat," and caramel slides on water.
Make your own caramel and cook it to 240°F.
Let the caramel rest 5 minutes before dipping, then twist off the extra.
Scrape the bottom on the rim of the pot and set the apple on buttered wax paper. No puddle!
📝 MOTHER'S CARAMEL (with my notes)
• 1 cup butter
• 2 cups packed brown sugar
• 1 cup light corn syrup
• Pinch of salt
• 1 can (14 oz) sweetened condensed milk
• 1 tsp vanilla
• 10–12 small tart apples and wooden sticks
Melt the butter, then stir in the brown sugar, corn syrup and salt, and bring to a boil over medium heat, stirring constantly. Slowly stir in the condensed milk. Keep it bubbling gently and keep stirring until it reaches 240°F on a candy thermometer. Off the heat, stir in the vanilla. Let it rest 5 minutes, dip, twist, scrape, and set the apples on buttered wax paper. Chill 15 minutes to set.
Keep caramel apples in the refrigerator if you're not eating them the same day.
