Description
Watch a fellow at my Costco push a flatbed cart out the door with a whole case of canned tuna stacked on it. Twenty, twenty four cans, shrink wrapped tight, feeling like he just did something smart. He didn't. Most of what he paid for is the can, the water sloshing inside it, and the salt covering up how long that fish sat on a shelf in the dark.
I'm Gus Lindqvist. Forty years behind a fish counter here in Seattle, and my family was in this trade before I was born.
Here's what a case of cans is actually buying you: five ounces net weight but only three and a half to four ounces of real fish, two hundred to three hundred milligrams of sodium a serving to mask a year on a shelf, fish cooked twice before it ever meets your fork, six to twelve dollars a pound for tired, salted tuna once you drain it, and the pricier white albacore carrying three times the mercury of the cheap chunk light.
Twenty feet away in the freezer aisle is a six dollar bag, wild caught, that beats every can on real fish for your money and on flavor. I'll tell you exactly which bag, how to read the label so you don't get played on phosphates and freezer burn, the right way to thaw it in ten minutes flat, and the three ways to cook it so it walks all over a can, including a tonno trick that beats the eight dollar imported jars. Also in this one: the dumbest thing I ever did with my own grocery money buying the pricey albacore for years, the real FDA guidance on mercury for pregnant women and kids, and the two or three times a year a can is still the right call.
The label tricks, the thaw method, the three ways to cook it: [SITE_LINK]
