Add 315–340g additional water (340g for a fluffier loaf). Stir in salt, then flour until a shaggy dough forms. Cover and rest 30 minutes. Do a set of stretch and folds. Rest another 30 minutes and repeat. Rest covered on the counter for approximately 5 hours. Turn dough onto a lightly floured counter. Shape by folding the bottom to the top, left to right, and right to left. Flip over and gently pull toward you to form a ball. Place upside down in a floured banneton. Cover and refrigerate 24–36 hours. Preheat Dutch oven and oven to 450°F. Score the dough, place on parchment, and carefully transfer to the hot Dutch oven. Bake covered for 28 minutes. Combine flour, baking soda, and salt. Cream together Crisco, white sugar, and brown sugar. Add eggs one at a time, beating after each addition. Beat in vanilla. Stir in the flour mixture by hand, then stir in chocolate chips. Scoop rounded spoonfuls onto a parchment-lined baking sheet. Bake for 8 minutes.
