Description

Just shape potatoes around ground beef! My family begs for these crispy pockets! Crispy potato pockets filled with savory ground beef, browned mushrooms, and melted cheese! Coated with panko, fried until deeply golden, and served with a cool garlic sour cream dip. Crunchy outside, soft inside, and easy to customize. 📄 Free one page recipe sheet to save or print (English): 👉 https://supolka.io/post/pst_f76658b3200b4d88 Tap the recipe card in the post to open the full written recipe and printable sheet. Total time: About 1 hour 15 minutes, plus cooling Servings: Makes 8 pockets, enough for 3-4 people Customize it! Use beef, pork, turkey, chicken, cooked vegetables, mushrooms, or just cheese. You can make several fillings in one batch - just keep every filling thick, cooled, and not watery. Cheddar, Mozzarella, Gouda, or Monterey Jack all work well. Cornstarch or potato starch can be used. Start with the listed amount, then add more only as needed. 🔔 New recipes every week: https://youtube.com/@YumCult 👍 Like if you enjoyed! Drain and steam dry for a few minutes. Add butter, garlic powder, and pepper; mash until smooth. Cool until just warm before adding starch. Start with 6 tbsp / 50 g, then add more only until the dough stops sticking. Shape into a ball and cool completely. Filling: Sear the beef before breaking it up. Season, cook just until no longer pink, and transfer to a bowl. Cook the mushrooms in the same pan until dry and browned. Add butter and onion; cook until soft and lightly golden. Make space in the center. Add butter, tomato paste, garlic, thyme, and paprika; cook for 30-40 seconds. Return the beef. Stir in the flour, then add broth or water, Worcestershire, Dijon, and optional dark soy sauce. Simmer until thick and glossy. The finished filling must be firm, not runny. Taste, adjust, and cool completely. Shape: Divide the dough into 8 pieces. Flatten each into a thick round. Add cooled filling and cheese without overfilling. Seal well and shape into a pocket. Dip in beaten egg, coat with panko, and press gently. Chill for 10-15 minutes if soft. Fry: Heat a shallow layer of neutral oil over medium heat. Fry two at a time for 2-3 minutes per side, turning as needed, until deeply golden. Transfer to a wire rack. Keep batches small. For a larger batch, use two skillets. Strain or replace the oil if dark panko crumbs collect. Dip: Mix all ingredients, taste, and adjust. Make it ahead and chill for even better flavor. Make Ahead and Storage: Freeze uncooked breaded pockets in one layer, then transfer to a container. Thaw overnight in the refrigerator before frying. Refrigerate cooked pockets for up to 3 days. Reheat in the oven or air fryer; a microwave will soften the crust. Prefer them baked?
