Description

Your tres leches is either soup or a dry sponge with a wet floor, and it was never your baking. Somebody told you a cake soaked in three milks is fragile. It is not. It is a lean sponge and one rule, and the rule is that it refuses to go soggy. Six tricks, mija, and the first one is about your tía's box mix. 📖 My mother's whole kitchen, every recipe and every measure, one book: THE SIX TRICKS 1. The cake must be LEAN. No butter, no oil, no box mix. The lean cake drinks, the rich cake drowns. 2. The air is the recipe. Whites to firm glossy peaks, then FOLD, never stir. 3. Cool it COMPLETELY. A warm cake shreds when the milk hits it. 4. Poke everywhere, pour in two or three passes. You are giving the milk doors and time. 5. Overnight, not 30 minutes. Four hours minimum. This is a dessert you make yesterday. 6. Too sweet? Half the condensed can. The structure does not care. THE RECIPE, WORD FOR WORD (page 347 to 348 of La Cocina de Bertha) Serves 12. About 1 hour, plus 4 hours cold. The sponge: • 5 large eggs, separated, room temperature • 1 cup sugar, divided (3/4 cup and 1/4 cup) • 1 cup all purpose flour, spooned and leveled, never scooped • 1 teaspoon baking powder • 1/3 cup whole milk • 1 teaspoon vanilla The soak: • 1 can (14 oz) sweetened condensed milk • 1 can (12 oz) evaporated milk • 1 cup heavy cream The top: • 1 1/2 cups heavy cream whipped with 3 tablespoons sugar • ground canela, or fruit 1. Beat the egg whites to soft peaks, add the 1/4 cup sugar, beat to firm glossy peaks. 2. Beat the yolks with the 3/4 cup sugar until pale and thick. Stir in the milk and vanilla. 3. Fold the flour and baking powder into the yolks, then fold in the whites in three additions, gently, until just combined. 4. Greased 9x13 pan, 350°F, 25 to 30 minutes, until golden and springy. COOL COMPLETELY. 5. Whisk the three milks. Poke the cooled cake all over with a fork. Pour slowly in two or three passes, letting it drink between passes. It looks like too much liquid. It is not. Trust the crumb. 6. Refrigerate at least 4 hours, better overnight. Then the whipped cream and a dusting of canela. IF IT WENT WRONG • Soggy and collapsed: the cake had fat in it, or it was warm when you soaked it. • Dense and flat: whites under-whipped, or stirred instead of folded. • Milk pooled and never went in: not enough holes, or poured in one flood. • Dry on top, wet on the bottom: cut too early. Give it the night. • Too sweet: half the condensed can next time. Tell me your county, and tell me the truth: was yours soup, or sponge? 🧽 The pan after, milk baked onto the glass: Clean The Mexican Way → [link to cleaning channel] 🍳 The savory half of my mother's kitchen: Cook The Mexican Way → https://www.youtube.com/channel/UCEpgRWDUGVu7UaYc7fB1Idw Next Sunday in this kitchen: the flan. #tresleches #mexicandesserts #bakethemexicanway
