Description
Most people are cooking rice wrong — and nobody ever showed them the small steps that make it right. In this kitchen, we make fluffy, separate white rice the Nigerian home way: no sticky clump, no gummy lump, no scorched pot. Just clean, proud grains to sit beside your beans and stew. Come and cook with me, my dear. 🍚
This is a plain, vegan white rice made with long-grain parboiled (converted) rice — the forgiving grain that holds its shape and stays separate. We cook it the open-water way (boil and drain), the method used in plenty of Nigerian homes, and finish it with a proper rest so every grain comes up light.
WHAT YOU'LL LEARN
Why rice turns to glue — and the two real causes (crowding and overcooking)
Washing off the loose starch the right way
The generous open-water method that makes sticky rice hard to make
How to judge doneness by tasting the grain, not watching a clock
The covered rest, off the heat, that gives you separate, fluffy rice
How to cool, store and reheat rice safely for the whole week
SIMPLE INGREDIENTS (serves about 4)
2 cups long-grain parboiled / converted rice
A big pot of water (about 10–12 cups)
About 1 teaspoon salt
THE SHORT VERSION
Rinse the rice 2–3 times until the water runs much clearer, then drain.
Bring a big pot of salted water to a boil and slide the rice in.
Boil in the open water, tasting often — pull it when the grain is tender with no hard center, still firm and separate.
Drain well.
Tip it back into the pot, lid on, OFF the heat, and rest 5–10 minutes.
Fluff with a fork, never a spoon.
Note: other rice varieties and the absorption method use their own water amounts and timing — follow the package for those.
STORING IT
Don't leave cooked rice sitting out warm. Spread it to cool quickly and refrigerate within about an hour at 40°F or colder; keep 3–4 days. Reheat all the way to steaming hot with a small splash of water. Reheating won't fix rice that was left out warm — when in doubt, let it go.
