Description
Everything I know, written down: [SITE_LINK]
That bright orange salmon in the Costco case was colored to a shade picked off a paint fan, the same way you'd pick a color for a bedroom wall. Twenty feet away, behind the freezer glass, there's a bag of wild caught salmon running about seven dollars a pound that beats it on flavor, on what's in it, and on price, all three at once.
Most of the fresh case is farmed Atlantic salmon fed a pigment until its flesh matches the shade shoppers were trained to want. The wild fish colors its own flesh on its own diet, and it never needed a drop of paint.
For forty years I've sold fish in Seattle, the last twenty out of my own case, so I know down to the penny what's built into that markup.
Here's what's really in that case: Atlantic salmon is farmed salmon, no exceptions worth mentioning, colored with canthaxanthin and astaxanthin printed right on the wholesale carton, labeled color added in fine print you're not meant to notice, wrapped in green badges like sustainably sourced that do the store's talking, priced ten to eleven dollars a pound to cover the ice, the lighting, and the waste, while a seven dollar bag of wild pink or keta sits frozen at its peak twenty feet away.
Also in this one: why frozen is almost always fresher than fresh, the three words to hunt for on the back of the bag, why sushi grade means nothing at all, and the one thawing mistake that ruins the whole dinner.
The fish, the labels, all of it: [SITE_LINK]
