Description

Just STACK tortillas with ground beef and cheese! Too good to be this easy! Layered tortilla stack pie with juicy ground beef, mushrooms and melty cheese in every layer. No folding, no rolling - just stack flour tortillas with filling and cheese, bake until golden and bubbly, then slice it like a pie. This is easy comfort food at its best: a cheesy ground beef dinner that comes together fast and feeds the whole family. Total time: About 40-45 min. Roughly 30 min prep, 10 min baking, plus resting. Servings: Makes one 10-inch stack, enough for 3-4 people. Customize it! The filling is flexible - use ground beef, pork, turkey or chicken. No mushrooms? Use bell pepper, zucchini or extra onion. Swap the peas for corn or black beans. Any good melting cheese works - Cheddar, Mozzarella, Gouda, Monterey Jack or Pepper Jack if you like heat. Want it less cheesy? Spread a thin layer of cream cheese on the tortillas instead - it holds the layers together beautifully. What would you put in yours? Where are you watching from? 🌎👇 🛒 Ingredients: For the Beef Filling: ~1 lb / 500 g ground beef ~9 oz / 250 g mushrooms, diced 1 onion, diced 2-3 garlic cloves, minced 1 tbsp butter 1/2 tsp dried thyme A dash of cayenne (optional) ~1/2 cup / 100 ml beef stock or water 2 tbsp Worcestershire sauce 1 tsp Dijon mustard A handful of frozen peas Salt and pepper to taste For the Stack: 3 flour tortillas, 10-inch / 25 cm ~1 cup / 100 g shredded Cheddar ~2 cups / 250 g shredded Mozzarella Dried oregano For the Side Salad: A few iceberg lettuce leaves 2-3 cucumbers, sliced A few radishes, sliced A small bunch of parsley, chopped A few green onions, thinly sliced For the Dressing: 1 tbsp lemon juice or apple cider vinegar 2 tbsp extra virgin olive oil 1 tsp Dijon mustard 1/2 tsp honey or maple syrup A pinch of dried oregano Salt and pepper to taste 📝 Quick Instructions: Beef: Brown the ground beef in a hot skillet. Let it sit for a minute to build a crust, then break it up. Season with salt and pepper and cook just until no longer pink. Transfer to a bowl. Vegetables: Add the mushrooms to the same skillet and cook until the moisture is gone and they start to brown. Add the butter and onion, and cook until soft and translucent. Stir in garlic, thyme and cayenne. Cook 30-40 seconds until fragrant. Sauce: Return the beef. Add stock, Worcestershire sauce and Dijon mustard. Simmer until thick and juicy - not watery, or the tortillas will go soggy. Turn off the heat and stir in the peas. Assemble: Line a baking sheet with parchment and lightly oil the center. Place the first tortilla down, then layer: cheese, filling, a little cheese, second tortilla, cheese, filling, cheese, third tortilla, cheese, the rest of the filling, and a generous layer of cheese on top. Press gently as you go. Sprinkle with oregano. Bake: Bake at 350°F / 180°C for 5-7 minutes, then broil until bubbly and golden. Watch it closely - every oven browns differently. Rest and serve: Let it rest a few minutes so the cheese sets, then slide it onto a board using the parchment. Cut into wedges and serve with a fresh side salad.
