Description
My husband Larry brought an air fryer home last spring and I told him I didn't need it. I'd spent 35 years working beside a flat-top griddle and a deep fryer on Main Street in West Plains, Missouri. Two weeks later I realized it was the closest thing to a short-order cook's griddle I'd ever had at home.
Here are 10 old diner suppers, each about 10 minutes in the basket, each sized for one person, and nothing to scrub when you're done: patty melt, chicken-fried steak, Friday fish fry, the Reuben, chicken fingers, salmon patties, a quick blue plate meatloaf, sausage and biscuits, home fries with a baked egg, and fried apple pies. Exact temperatures and times for every one, plus the three rules our cook Earl ran the line by.
Pull up a stool. The coffee's hot.
📖 Every diner supper and every trick Earl taught me, with the real amounts, is in my little book "Nancy's Diner Secrets":
