Description

Find All my recipes in one place! Otis Granger Cook Book: https://otisgranger.com/ Potatoes, sausage and hamburger. One skillet, one lid, about forty minutes, and it comes off the stove a whole supper. Crisp at the edges, soft in the middle, every potato coated in everything that browned in that pan. Down South they call it dirty smothered potatoes. In my mother's farmhouse it was Saturday supper. I'm Otis. Forty years of barns and estate auctions across the Midwest, and the kitchen is the last room I clear. In the bottom cupboard of almost every farmhouse there's a heavy black cast iron lid no pot in the house fits. It goes to the big skillet on the wall, and it's the whole secret to this supper. What you need: 2 lb small potatoes, skins on · 1 lb smoked sausage · 1 lb hamburger (85/15) · 1 onion · 1 green bell pepper · 2 ribs celery · 3–4 garlic cloves · paprika, black pepper, garlic powder, onion powder, thyme, pinch of cayenne · salt (a little, at the end) · 1 cup broth · splash of Worcestershire · 1 pat butter · handful of shredded cheddar · 1 spoon bacon grease How: 1. Brown the sausage coins in bacon grease, set aside, keep the fat. 2. Hamburger in as one flat patty, crust the bottom, then break it up and cook it through. 3. Onion first for 1 min, then pepper and celery for 2–3. Garlic on top. 4. Potatoes cut all the same size, seasoning in, sausage back in, a pinch of salt. 5. Broth (scrape the bottom), Worcestershire, butter on top. LID ON, fire low, 20–25 min, turn every 10. 6. Lid off, cook it down until it's glossy and the edges crisp. 7. Fire off, cheddar on, lid back for 2 min. Raw diced green pepper on top. Leftovers: back in the skillet the next morning, crack two eggs on top, lid on 3 minutes. What did YOUR family call this skillet, and what was in it? Who made the Saturday supper in your house? I read every one.
