Description

Most people cook salmon wrong, and after forty years behind a fish counter, the last twenty running my own case in Seattle, I can tell you it's almost never the fish's fault. It's the method. A customer walks up to the case a few times a week and confesses the same thing, dry salmon, soggy skin, an apology eaten quietly off the plate. Recipes aren't lying to you exactly, they're just written for a fillet you don't have, in a pan you don't own, on a stove that isn't yours. A method adapts. A recipe guesses. For forty years, reading fish at the case and fixing bad salmon dinners has been my job. Here's the whole counter method in one place: smell before color, clean water not dock at low tide, center cut over tail piece, six ounces skin on, pin bones pulled with tweezers before anything else touches the pan, previously frozen salmon is not a downgrade, fridge thaw for twenty four hours not counter or hot water, dry the fillet on paper towels and salt it thirty to forty minutes before cooking, skin down first and pressed flat for ten seconds, four to five minutes a side, thick center cuts finished in a four hundred degree oven, and a thermometer pulled at one hundred forty five degrees, not a timer's guess. Also in this one: why the skin side isn't the garbage side, the real difference between wild and farmed pricing at my counter, why marinades ruin the sear, how to reheat leftovers without wrecking them twice, and the two minute pin bone check almost nobody does. The whole method, written out: (link in bio) New video every day. Subscribe to Gus Lindqvist Fish.
