Description

Two onions fried slow till they go sweet and gold, piled on toasted bread and salted. That's supper for about a dime, and it's the first of the old mountain suppers in this video. Twenty-seven of them, most every one just three simple things and a little of what was always on the shelf: the flour, the sugar, a drop of milk, a spoon of grease for the pan. Enough for a month of hot dinners out of what's already in your kitchen. I'm Lula Maggard. I was raised up a holler on these, and I mean to get Mama's suppers down before they're gone. In this video: • Killed lettuce, and why the grease has to be spitting hot • A gravy made with a swallow of black coffee poured into the ham skillet • Gritted bread from corn too green to grind, that most folks under seventy never tasted • Two wild greens you have to fix right: poke sallet (boil it, pour it off, boil it again) and ramps (and the poisonous look-alike that grows beside them) • Why liver turns to shoe leather, why mush falls apart, and why persimmons wait for the first frost • Why nobody cooks this way anymore: the company store, the mines, and the families that left for the factories • Number one, which isn't a thing you cook at all 📖 Like Mama Made It: all 27 of these and a hundred old suppers in all, written out with the real measures, small batches for when it's just you, and the fixes for gummy cobbler and lumpy gravy: [BOOK LINK] Chapters 0:00 A supper for a dime, tonight 1:08 What's coming (and the plate in the warming oven) 2:15 #27 Killed lettuce 3:38 #26 Macaroni and tomatoes 4:26 #25 Rice pudding 5:15 #24 Egg gravy over a cold biscuit 6:04 #23 Poke sallet and eggs (cook it right or it'll make you sick) 7:08 #22 Stewed tomatoes with bread 7:58 #21 Cushaw cooked down sweet 9:20 #20 Creasy greens over cornbread 10:21 #19 Fried hominy with side meat 11:10 #18 Gritted bread 12:09 #17 Ramps with eggs and potatoes (the dangerous look-alike) 13:15 #16 Fried cabbage with side meat 14:07 #15 Stewed chicken and milk gravy 15:02 Why nobody cooks this way anymore 15:58 #14 Country ham with red-eye gravy 16:53 #13 Peach cobbler 18:02 #12 Liver and onions 18:56 #11 Stewed potatoes 19:49 #10 Chess pie 20:45 #9 Fried pork chop with milk gravy 21:56 #8 The tomato sandwich 22:40 #7 Fried mush 23:35 #6 Sorghum gingerbread 24:23 #5 Sweet potato pie 25:17 #4 Persimmon pudding 26:11 #3 Fried apple pies 27:14 #2 Cocoa gravy over hot biscuits 28:10 #1 The plate kept back 29:27 Pick one this week Tell me in the comments what town you're watching from, and what your people called that mess of greens wilted down with hot grease: killed lettuce, kilt lettuce, or wilted lettuce? Whichever supper folks name the most, that's the one I'll go deep on next. If this brought back a supper you'd forgotten, a like or a subscribe means a great deal. I'll be back at the stove with you soon. #appalachiancooking #forgottenrecipes #poormanmeals
