Description

The fish I would never let the kids in my family eat is sitting in almost every seafood case in America. Ounce for ounce, it carries about forty five times the mercury of salmon. And I still sell it. Mercury does not sit in the fat or the skin. It binds to the protein in the meat. You cannot cook it out, grill it out, or cut it out. Only which fish you pick, and how often, changes the number. I have sold fish in Seattle for forty years, the last twenty running my own counter. Here is what the FDA's own mercury table shows: nearly every fish on the avoid side is big, lives a long time, and eats other fish. Seven, shark, about forty four times the salmon. Six, barracuda, and a toxin with no antidote. Five, king mackerel, about thirty three times the salmon. Four, bigeye tuna sold as ahi, about thirty one times. Three, marlin, about twenty two times. Two, Gulf tilefish, one point one two parts per million, the highest on the whole table. One, swordfish, about one part per million across six hundred and thirty six samples. Also in this one: the same tilefish name with about eight times less mercury, the tuna can most families have backwards, the swap I would put on the table for every fish, and why I still sell swordfish to healthy grown-ups.
