Description
You cook once, and you are stuck eating the same leftovers for a week, or washing a dozen plastic containers. The pan that fixes this is already in your cupboard, and you only use it for muffins. Six cups means six dinners at once: Mini Meatloaf Cups, Mini Pizza Cups, Taco Cups, Cheesy Spaghetti Nests and Mini Shepherd's Pies, each already the size of a dinner for one. Two go on your plate tonight, the rest freeze right in the pan — no containers, no labels, no math. Stay with me for number nine.

🍽️ FULL RECIPES (each makes 6 cups — 2 for tonight, 4 for the freezer)
1. MINI MEATLOAF CUPS
1 lb ground beef • ½ cup DRY bread crumbs • ½ cup milk • ½ cup ketchup. Soak the crumbs in the milk 2 min, fork in the beef 10 strokes, into 6 oiled cups, press flat, ketchup to the edges. 350°F, 25 min.
👉 Secret: the SOAKED CRUMBS hold these better than an egg — the bread swells with the milk, then with the juices, so nothing runs out.
2. MINI PIZZA CUPS
One 16 oz tube biscuits (the kind with 8) • 1 cup pizza sauce • 1 cup shredded mozzarella • a handful of pepperoni. Flatten a biscuit, press it part way up each cup, sauce, cheese, 3 pepperoni. 375°F, 15 min.
👉 Secret: that tube is flour, shortening, buttermilk and leavening mixed in order and CHILLED — what goes wrong in a warm kitchen.
3. SAUSAGE AND EGG BREAKFAST CUPS
6 eggs • 1 cup cooked crumbled breakfast sausage • ½ cup shredded cheddar • a splash of milk. Oil 6 cups well. Sausage first, beaten eggs to ¾ full, cheddar on top. 350°F, 20 min.
👉 Secret: best of the ten COLD from the refrigerator next day. Swap in ham, bacon or a sliced hot dog.
4. CHEESY SPAGHETTI NESTS
½ lb spaghetti • 2 eggs • 1 cup shredded mozzarella • ½ cup grated Parmesan. Boil, drain, stand 5 min. Beat the eggs with the Parmesan and turn it through until every strand is coated. A tangle on a fork into each oiled cup, mozzarella over. 375°F, 20 min.
👉 Secret: EGG SETS AT A LOWER TEMPERATURE THAN CHEESE MELTS — the only reason the nest lifts out whole. COLD spaghetti works best.
5. TACO CUPS
6 small flour tortillas • ½ lb ground beef • 1 packet taco seasoning (1 oz) • 1 cup shredded cheddar. Brown the beef small, packet and a splash of water, bubble 2 min. A tortilla pressed into each cup, beef in, cheddar over. 400°F, 12 min.
👉 Secret: the real work in that packet is the CORNSTARCH — it turns the water into sauce that clings instead of running out.
6. HAM AND HASH BROWN CUPS
3 cups FROZEN shredded hash browns • 1 cup diced cooked ham • 1½ cups shredded cheddar • 2 tbsp melted butter. Turn the potato with the butter, press up the sides of 6 oiled cups. 400°F, 15 min. Half the cheddar in, ham, the rest over — back in at 400°F, 10 min.
👉 Secret: FROZEN shredded potato already had its water taken out — the reason it crisps and fresh grated does not.
7. SLOPPY JOE BISCUIT CUPS
One 16 oz tube biscuits (8 count) • ½ lb ground beef • one 15 oz can sloppy joe sauce • ½ cup shredded cheddar. Brown the beef, whole can in, bubble 3 min until it stops looking wet. 6 flattened biscuits into 6 oiled cups, filling to the top, cheddar. 375°F, 15 min.
👉 Secret: that can is tomato, sugar, vinegar, onion and pepper — the same list you would use. No biscuits? Use the cups bare.
8. MASHED POTATO AND SAUSAGE CUPS
4 cups mashed potato, box or leftover • 1 EGG • 4 hot dogs or cooked sausages in coins • 1 cup shredded cheddar. Beat the egg through. Into 6 oiled cups ¾ full, a dip pressed in each, sausage in, cheddar over. 400°F, 20 min.
👉 Secret: ONE EGG THROUGH 4 CUPS is the difference between lifting it out and scraping it out.
9. MINI APPLE CRISP CUPS ⭐
One 21 oz can apple pie filling • ½ cup brown sugar • 1 cup rolled oats • ½ stick butter, melted • cinnamon. Filling into 6 oiled cups, cinnamon over. Stir oats, sugar and butter to WET SAND, spoon over, press down. 350°F, 25 min.
👉 Secret: NO PEELING AND NO CHOPPING. Eat one warm out of the cup; the other four freeze in the pan and lift into a bag an hour later.
10. MINI SHEPHERD'S PIES
1 lb ground beef • one 15 oz can mixed vegetables, drained • one 12 oz jar beef gravy • 4 cups mashed potato. Brown the beef, vegetables and the jar in, bubble 3 min. Beef halfway up each oiled cup, potato to the rim, fork ridges. 400°F, 20 min.
👉 Secret: GRAVY IS THICKENED WITH STARCH, AND STARCH SETS AS IT COOLS — the filling goes from loose to solid and lifts out in one piece.
