Description

Mama’s Old Mexican Trick for the Best Chicken Soup You’ve Ever Tasted Most chicken soup is not bad — it is just thinner, weaker, and less flavorful than it needs to be. In this video, I’m sharing the old Mexican cooking tricks Mama taught me for making rich, deeply flavored homemade chicken soup without relying on bouillon cubes or store-bought chicken broth. The biggest difference starts with the chicken itself. Boneless chicken breast may be convenient, but bone-in chicken, backs, necks, thighs, drumsticks, and the carcass from a roast chicken can give your broth much more body and richness. You’ll also see why I start chicken in cold water instead of dropping it into boiling water, why the gray foam that rises to the surface should be skimmed, and why a good chicken broth should gently simmer instead of boiling hard. We’ll go through the timing of the vegetables too. Onion, garlic, carrot, and celery help build the broth early, while fresh ingredients like cilantro, serrano, and lime belong near the end so they still taste fresh when the soup reaches the bowl. I’ll also explain why I wait until the broth has developed before adding the final salt, and why real homemade chicken broth can become almost jelly-like in the refrigerator once it cools. If your chicken soup usually comes out pale, watery, cloudy, or tastes mostly like bouillon, these simple soup tricks can completely change the way you make it. No complicated ingredients. No expensive equipment. Just chicken, vegetables, time, and a few techniques Mama understood long before I knew why they worked. Let me know in the comments how your family makes chicken soup and whether you grew up with any of these same kitchen tricks.
