Description
💰 Save $6,000 a year the hillbilly way. The old secrets to living without spending money.
Billy Ray McCoy of Sassafras Holler shares a generations-old Appalachian technique his Mamaw Pearl and Papaw Amos passed down without ever writing a word of it: how to make broth cakes, also known as portable soup or pocket soup, from bones that cost next to nothing. These shelf-stable cubes of concentrated bone broth, made from pork neck bones, pig feet, chicken feet, and beef knuckles, turn a pot of dry beans, rice, or cornmeal mush into a real meal that tastes like something. Billy Ray walks through every step, from the lazy pot and fat-skimming to the cold saucer test and the critical jar week that reveals hidden moisture. He explains Papaw's secret about cold dry winter air being the only thing that dries a broth cake properly without softening it, why you never add salt during cooking, and how to store the finished cakes for up to a year. He also draws a clear line between what a homemade broth cake is and what a twelve-dollar carton of store-bought bone broth actually contains. This video draws from The Hillbilly Way, the family's book on traditional Appalachian homesteading skills.
