Description

Most sausage gravy comes out thin, pale, and tasting like raw flour, and it soaks a good biscuit to nothing before it hits the table. That is not a bad cook. It is one step done wrong, and it is probably not the step you think. In this video I walk through 8 things that make the difference, cooked the way the old cattle crews did it over a fire. Number six is the one nobody ever told you. I show you why every drop of sausage fat stays in the pan, how dark to brown the meat, why cold whole milk goes in slow, and the spoon test that tells you when to pull it. My numbers are simple: about two tablespoons of flour per pound of sausage and a full teaspoon of black pepper stirred in early, not shaken on at the end. The biggest change is that the sausage never leaves the skillet. The flour goes right over the meat and the fat, and the gravy builds itself from the same pan. If you learned gravy from a packet or a recipe card and it has never quite tasted right, this is the way I have made it ever since a cold morning at a camp stove.
