Description
📖 These suppers written down with the measures: https://vernasbook.com so you're not guessing at the stove. My printed cookbook ships to your door!
Ten forgotten suppers your mother probably made on a Tuesday, without a recipe, and every one of them costs under five dollars for two people. The tenth is the cheapest supper my mother ever made, about three dollars, and it is the one I still cook when I want to feel like a girl again. Stay to the end for it.
🥄 THE TEN SUPPERS AND WHAT EACH COST (for two, priced this week, so take it as a map and not a promise)
1. Creamed eggs on toast: about $1.50
2. Macaroni and tomatoes: about $2.20
3. Welsh rarebit: about $3
4. Potato pancakes: about $2
5. The poor man's meal (potatoes, onions, hot dogs): about $3.25
6. Corned beef hash with an egg on top: about $4.30
7. Fried green tomatoes: about $3 (nothing if you grew them)
8. Cabbage and noodles: about $4
9. Onion soup with cheese toast: about $2.50
10. Milk gravy over boiled potatoes with fried salt pork: about $3
🍲 THE ONE I PROMISED (number 10)
4 ounces salt pork, 4 potatoes, 2 cups milk, 3 tablespoons flour, salt, pepper. Fry the sliced salt pork 7 to 8 minutes until crisp and lift it out. Boil the peeled potatoes in salted water 25 minutes. Leave 3 tablespoons of the fat in the pan with every brown speck, stir in the flour and cook it 1 to 2 minutes, then add the milk a splash at a time, scraping the pan, and simmer 5 to 8 minutes. Salt and pepper it well, at least 3/4 teaspoon of each, but taste first because the salt pork is salty. Pour it over the potatoes and set the crisp pork on top.
🔥 A FEW HONEST WORDS: several of these lean on salty foods like hot dogs, canned hash, bouillon, and salt pork, so taste first and salt last. I am a cook, not a doctor. If you watch your salt, ask your doctor what is right for you.
If one of these brought your mother's kitchen back for even a minute, I would take a subscribe as a personal kindness. It costs you nothing and it helps me keep making these for you.
Have a blessed day.
