Description
Too Good to Be This Easy! One-Pan Ground Beef Pasta Dinner
A hearty one-pan dinner with ground beef, pasta, colorful vegetables, tomato, garlic, herbs, Parmesan, and lime. The pasta cooks right in the skillet, soaking up all the flavor.
It is filling and nicely balanced, with plenty of protein, satisfying carbs, lots of vegetables, and no added oil - perfect for an easy weeknight dinner.
Total time: About 35 minutes
Servings: 3-4 generous portions
Estimated nutrition:
About 480-520 calories per serving for 4 portions, or 640-700 for 3 larger portions. This varies with the beef, pasta, broth, vegetables, and toppings used.
Customize it!
I used lean 92/8 ground beef with no added oil. Ground pork, turkey, chicken, or a combination will work too. Spoon off excess fat if needed. If the pan looks dry, add a splash of broth or water.
My frozen mix had corn, peas, peppers, carrots, green beans, and red beans, but any frozen or fresh vegetable mix works. Cut fresh vegetables small and cook firmer ones a little longer.
Fusilli holds the sauce well, but any short pasta works. Different shapes may need a little more liquid or cooking time. Use beef broth for richer flavor or hot water if preferred. Taste before adding more salt. You can also replace the fresh garlic with 1/2 tsp garlic powder. Lime is optional, but balances the rich beef and tomato flavor.

🛒 Ingredients:
Large skillet with lid, about 11 in / 28 cm
~1 lb / 500 g lean ground beef
1 onion, diced
~14 oz / 400 g frozen mixed vegetables
2-3 garlic cloves, minced
2 tbsp tomato paste
1/2 tsp dried thyme
1/2 tsp paprika
~9 oz / 250 g short pasta
~2 1/2 cups / 600 ml hot beef broth or water
Salt and pepper to taste
Fresh parsley, chopped
For Serving:
Fresh lime
Grated Parmesan
Freshly cracked pepper
Extra parsley
📝 Quick Instructions:
Add the beef to a hot skillet. Press it down and sear until browned underneath. Flip, break it up, season with salt and pepper, and brown briefly. It does not need to be fully cooked yet. Transfer to a bowl.
Cook the onion in the same pan until soft and translucent. No oil is needed. Spoon off excess fat, or add a splash of broth or water if the pan is dry.
Add the frozen vegetables and cook for 3-5 minutes, until hot and most of the extra moisture has cooked off.
Make space in the center. Add the tomato paste, garlic, thyme, and paprika. Cook for 30-40 seconds, then mix everything together.
Return the beef to the skillet. Add the pasta and hot broth, stir well, and bring to a gentle simmer.
Cover and cook over medium-low heat for 12-15 minutes, stirring occasionally. If the pasta is still firm and the pan looks dry, add more broth or hot water.
When the pasta is tender, taste and adjust the seasoning. Turn off the heat, stir in the parsley, and let it rest for 1-2 minutes.
Serve with lime, Parmesan, black pepper, and extra parsley.
