Description
My mother never wrote a single recipe down. Not one. Everything she knew lived in her hands, and when she was gone, there was nobody left to ask. So today I'm doing what she never did — writing down 40 things she knew that nobody ever put on paper. Every one of them is free. Every one of them is small. And every one is the difference between food that's fine and food that someone remembers.
In this video, counting down from 40 to 1:
🍝 The pasta tricks (no oil, the salt ratio, never rinse, the white dot)
🍅 The Sunday sauce tricks (brown the meat, fry the paste, time not sugar, the parmesan rind)
🍖 The meat tricks (the panade, the searing myth, the thermometer, resting)
🍗 The chicken tricks (pound it flat, salt vs. lemon, the breading order)
🍚 The risotto tricks (don't rinse, don't over-stir, finish off the heat)
🥔 The potato and vegetable tricks (the cold water soak, garlic in its skin, never boil broccoli)
🍳 The egg and fish tricks (lacy edges, the white stuff on salmon, fish in paper)
🫘 The bean and bread tricks (salt doesn't toughen beans, the dough is supposed to feel wrong)
🥇 And number one — the trick my mother would have put first
I'm Rosa. Don't try all 40 this week. Pick three.
If this helped, hit subscribe and tap the bell — new Italian kitchen tricks every week. And tell me in the comments: which three tricks are you trying first, and which one surprised you most? If your grandmother knew one I missed, write it below — I'd like to put it in the next 40.
Next time in this kitchen: the eggplant everyone fries wrong.
