Description

📖 I’ve shared plenty more old recipes, kitchen tricks, and money-saving ideas in my cookbook, available on my website - https://www.haroldcooks.com I used to think crispy potatoes meant frying them in a lot of oil, but this method gives you crisp golden edges, a soft center, and that flower-like shape without frying. The trick starts before the potatoes ever go into the oven. I cut six to eight deep sections, then use thin strips from the trimmed potato bottoms as little spacers. Those scraps help hold the cuts open so hot air can reach inside, the edges can dry, and the potato can actually crisp instead of steaming shut. In this video, I’ll show you how I season them with butter, olive oil, paprika, garlic, and oregano, how I keep the potatoes standing upright, how I make the mushroom and onion filling, and how I add cheese without covering the shape or making the potatoes soggy. I’ll also show you the mistakes that can ruin the texture, like cutting too many thin slices, using wet filling, packing the potatoes too tightly, or leaving them in the oven too long just to brown the cheese. For serving, I finish them with a simple dill sour cream sauce, which gives you that hot, crisp, creamy potato with a cold, fresh contrast in every bite. If you enjoy practical old-fashioned cooking, simple ingredients, and kitchen tricks that make ordinary food feel special, subscribe for more. And tell me in the comments what you want to see me make next, another potato trick, a forgotten Jewish recipe, or something completely different.
