Description
🥢 Everything my mother taught me about cooking for one, I wrote down for you.
📘 CHINESE COOKING FOR ONE - get it here: https://cookwithmeilin.com
You bring home a rotisserie chicken, eat the breast the first night, pick at a leg the next day, and by Thursday half of it goes in the trash, bones and all. My name is Mei Lin. I grew up in Guangzhou, and in my grandmother's kitchen one chicken was a whole week of dinners. Here is how one store chicken becomes 10 Chinese dinners, from the first warm plate all the way down to a pot of soup from the bones.
In this video:
- The 10-minute job on the first night that makes the whole week work
- Cold chicken with ginger and green onion oil
- Crispy chicken skin, and the jar of chicken fat that makes rice taste like a restaurant
- Chicken fat fried rice that gives dry breast meat a second life
- Real chow mein, crisp outside and soft in the middle
- Chicken and sweet corn soup with silky egg ribbons
- Chicken lettuce cups
- Chicken with peppers and black bean sauce
- Soup from the bones, and ginger chicken noodle soup
- Bone broth jook, the last spoonful the chicken has to give
- How long cooked chicken keeps, and why every dinner needs less soy sauce
No special equipment and no long shopping list. Just one chicken, a frying pan, a pot and a few bottles from the Asian aisle. You do not have to make all 10. Take 10 minutes on the first night, give every part a place to go, then pick one dinner this week.
What did your mother or grandmother do with the chicken bones? Did she make soup, or did she have a trick I have never heard of? Tell me in the comments. I read every one.
