Description
You want a bowl of hot soup tonight, but every recipe makes a whole pot, and by Thursday you cannot look at it anymore. My name is Mei Lin. I grew up in Guangzhou, where soup comes first at every dinner, and I came to America in 1987. These are the ten quick Chinese soups I make for myself: one bowl each, ten minutes on the stove, most for less than two dollars.
In this video:
The bowl trick my mother used to measure exactly one serving of soup, with no measuring cup
Seaweed and tofu soup, ready in five minutes for about 60 cents
Chinese corn soup with chicken, made with a can of creamed corn
Hot and sour soup for one, with the white pepper trick from the restaurant
Spinach and pork soup, with the cornstarch trick that keeps pork soft and silky
Fish and tofu soup with ginger, made with one frozen fillet
Pickled mustard greens and pork, the working man's soup
West Lake beef soup, thick and silky with fresh cilantro
Ginger chicken soup with mushrooms, for the night you feel a cold coming
Shrimp and winter melon soup, the gentlest bowl of all
My grandmother's pork meatball and bok choy soup, and how to freeze the meatballs for tired nights

No big pot, no leftovers and no special equipment. Just a small pot, a few things from the pantry, and one hot bowl of soup with real protein in it, made the way Cantonese families make it on a busy night.
What soup did your mother make? Not the recipe, just the name of it. Tell me in the comments. I want to hear it before it is gone.
I put out a new video every day. Subscribe so you do not miss one.
