Description

If your method for cooking rice leaves you with a crunchy top or a sticky bottom, you are likely missing one simple step. Most of us have dealt with a pot of grains that turns into a disaster, whether it is hard on top or a gummy mess. This guide breaks down the common mistakes that keep you from getting that perfect, individual texture. We are moving past the guesswork to focus on the essential techniques that ensure your side dish complements your meal rather than ruining it. Beyond the pot, I am showing you how I prep the rest of the meal, including grinding spices and rolling dough for a fresh tomato-based dish. When you learn how to master cooking rice, you stop worrying about the texture and start focusing on the flavor. It is about understanding the heat and the moisture in your pan so you can avoid sticky rice entirely. Using these simple rice cooking tips will change how you approach your daily routine, ensuring that your fluffy rice recipe comes out consistent every single time. Tell me in the comments if you struggle with the texture of your rice or if you have a trick that never fails. Subscribe for weekly kitchen breakdowns, and let's get back to basics. THE RICE - 1½ cups plain long-grain white rice (not instant, parboiled, or short grain) - Using jasmine? Use ¼ cup less liquid. THE FAT - 3 tablespoons manteca (lard) or vegetable oil THE RED - 2 Roma tomatoes + ¼ white onion, blended smooth - OR one 8-ounce can plain tomato sauce (= 1 cup) THE BROTH - Enough chicken broth to bring your TOTAL liquid to 3 cups - If your red measures 1 cup, use 2 cups broth. Not a spoonful more. - 1 teaspoon salt in homemade broth (half that if using bouillon powder) THE MOLCAJETE PASTE - ½ teaspoon whole comino (cumin) seeds - 6 black peppercorns - 1 garlic clove - Pinch of coarse salt - 2 tablespoons broth - No molcajete? ¼ teaspoon ground comino + 1 garlic clove smashed with salt ━━━━━━━━━━━━━━━━━━━━ BONE BROTH (makes about 5 cups) ━━━━━━━━━━━━━━━━━━━━ - The carcass from one roast chicken (the frame left after you pull off the meat) - ½ onion, 2 garlic cloves, 1 bay leaf, 1 teaspoon salt - 7 cups cold water Barely simmer 1½ hours, strain. Freezes for months. Store broth or bouillon works too. Use half the salt. ━━━━━━━━━━━━━━━━━━━━ MY MOTHER'S SEVEN RULES ━━━━━━━━━━━━━━━━━━━━ 1. Buy plain long-grain rice. Loose starch is what turns your pan to glue. 2. Make the broth from bones, and COUNT THE RED. Pour your blended tomato into a 4-cup measuring cup, read the line, and subtract it from 3 cups. Whatever's red, you count. 3. Grind the comino, peppercorns, garlic, and salt in the molcajete. Loosen with broth. 4. Wide, heavy pan with a snug lid. Heat the fat over medium. Toast the rice dry, stirring gently, until most grains are the color of a paper grocery sack (about 7 minutes). 5. Add the red and fry about 2 minutes, just until it turns a deeper red. Don't cook it dry. (If it does go dry, add ¼ cup broth.) Stir in the molcajete paste, then all the broth. One stir to the bottom, then the spoon goes in the sink. Boil uncovered until the broth drops to the level of the rice and small holes appear on top. 6. Lid on, lowest heat, 15 minutes. Don't lift the lid. (Loose lid? Crimp foil over the pan first.) 7. Fire off. Lay a clean dish towel over the pan, put the lid back on, and walk away for 10 minutes. Then fluff with a fork, edges to middle. #mexicanfood #mexicanrice #mexican #elenacooking
