Description
Why your homemade cheese won't set comes down to the milk you choose. Here is why my first attempt turned into sour soup.
Making homemade cheese is a staple in many kitchens, but relying on the wrong milk will leave you with a pot of curdled milk instead of a solid wheel. I tried to follow the traditional steps, only to watch my mixture separate into watery whey and tiny, unusable specks. It is a frustrating lesson, but sometimes the failure is the most important part of the process.
We often think we can replicate the old Mexican cooking methods with store-bought shortcuts, but the ingredients dictate the result. If you are struggling with a recipe that refuses to firm up, it might be time to check the label on your carton. Learning from these kitchen mistakes ensures that the next time you set out to create something from scratch, you actually have a solid result to show for your patience.
Tell me in the comments if you have ever had a recipe fall apart at the last second. Subscribe for weekly kitchen breakdowns, and let's get back to basics.

- Two jobs for the whey, so nothing goes to waste
- Queso asado on my grandmother's comal: a cheese that browns instead of melting
WHAT YOU NEED
- 1/2 gallon whole milk, regular pasteurized (NOT ultra-pasteurized)

- A heavy pot, a wooden spoon, a colander, and cheesecloth or a thin, clean cotton towel
- Optional: 1 serrano chile, chopped fine, and a small handful of cilantro
