Recipe: Tomato Soup -- For canning or freezing.
4 T butter
2 T olive oil
2-3 large onions
1 head of garlic
10-12 cups fresh tomatoes, or 3 28 oz cans crushed tomatoes
2 t seasoned salt
2 t black pepper
1 1/2 cups half and half
1/4 c brown sugar (optional)
1 quart chicken broth
1/2 c fresh basil
1. In large dutch oven add butter, oil, onions and 1 t salt. Cook on low for 15-25 mins until onions are golden brown and caramelized. Low and slow is the key.
2. Add garlic and cook for 45 seconds, be sure to not brown garlic
3. Add tomatoes, remaining salt and pepper. Simmer for 35-45 minutes.
4. Working in batches, place tomatoe mixture and cream into a high powered blender and blend until very smooth. Pour mixture into a large bowl until all the soup is blended.
5. Return soup back into the dutch oven and stir in basil.
6. Taste soup for seasoning and add the sugar if needed.
