Description

Your pancakes come out flat like a crepe, dense in the middle, collapsing the moment you stack them. Japanese home cooks have known three specific changes for 60 years, and one is already sitting in your pantry. 📖 The book I mention in the video — What She Cooked Behind a Long, Healthy Life: https://kitchen.myreads.store The first secret happens before you crack an egg. Take your eggs and milk out of the refrigerator and set them on the counter for 20 minutes. Cold ingredients make gluten contract and tighten, the batter becomes stiff, and your pancakes bake dense. Room temperature ingredients stay loose, the proteins relax, and the batter holds onto every air bubble you fold in. Sift your flour twice, add it in three separate additions, and fold it in with a spatula. Cut straight down the center of the bowl, sweep under the batter, lift it up and over, then rotate the bowl a quarter turn. Twelve to fifteen folds is usually enough. Overmixed batter looks smooth and glossy, but properly folded batter is thick, uneven, with visible streaks of flour just disappearing. The secret is plain yogurt. Replace half the milk with thick plain yogurt with no sugar and no flavor. The acidity wakes up the baking powder harder and makes more bubbles. The thickness holds those bubbles in place while the pancake cooks. For 200 grams flour, use 100 milliliters milk and 100 grams yogurt. Cook on medium-low heat, not medium-high. Wipe the pan with a thin layer of neutral oil, pour from 15 or 20 centimeters above the pan, and cover it with a lid. The lid traps steam, cooking the top gently while the bottom sets. After three or four minutes, tiny bubbles form on the surface and the edges start to look dry. Flip once, cover again for one or two minutes, and stack them immediately while they're hot. Warm the syrup for 30 seconds and drizzle it around the stack, not over the top, so the pancakes stay tall.
