Description

Lumpia is magnificent for about fifteen minutes and then it goes soft. That's not a frying problem, it starts long before the oil. Squeeze the water out of the grated carrot and onion, chill the filling, roll them THUMB-THIN, seal with cornstarch slurry instead of egg, and fry them twice: 325°F until pale and set, rest, then 375°F for thirty to sixty seconds to glaze the shell hard. Then drain on a RACK, never paper towels, and never stack them hot. And the trick worth stealing: freeze them raw and fry from frozen — frozen lumpia come out crispier than fresh. I'm Lorna, Tita Lorna, born in Pampanga and cooking for my family in California for thirty-one years. Recipe (makes 40–50 thin rolls): Filling • 1 lb ground pork (not lean — you want the fat) • 1 carrot, grated · ½ onion, minced · 4 cloves garlic · 1–2 stalks celery or singkamas • **SQUEEZE the grated carrot and onion dry** — that water is what makes lumpia soggy from the inside • 1 tbsp soy sauce · 1 tsp salt · lots of black pepper · 1 egg to bind · splash of oyster sauce (optional) • Fry a teaspoon of the mix and TASTE it before rolling 90 of them • Chill the filling 30 minutes Wrappers • Thin spring roll / lumpia wrappers (not egg roll wrappers). Thaw overnight in the fridge, never the microwave. Rest 10 minutes before peeling. Keep under a slightly damp — not wet — towel. Rolling • About 1 tbsp filling per roll, in a thin line. Thumb-thin. Tight, no air pockets. • Seal with cornstarch slurry (1 tbsp cornstarch + a little water), not egg. Frying • FIRST FRY 325°F, 3–4 min, until pale gold and set. Rest on a rack (can be done a day ahead). • SECOND FRY 375°F, 30–60 seconds, until deep golden and blistered. • Don't crowd the pan — every extra roll drops the oil temperature. • Drain on a WIRE RACK. Never paper towels, never stack hot, never cover with foil. Hold in a 200°F oven, uncovered, up to an hour. • Cut after frying, 2–3 pieces per roll on the diagonal. Freezing: freeze raw on a tray for an hour, then bag. Keeps 3 months. **Fry from frozen, never thaw.** Air fryer: spray well with oil, 380°F for 12–15 min, turning once. Party math: 4–6 pieces per person, then double it. 1 lb filling ≈ 40–50 rolls. Leftovers: refrigerate uncovered on a rack, revive in a hot oven or air fryer. Never the microwave.
