Description
If you already cook oxtail the Jamaican way, the Hawaiian way, or smothered with gravy, this is the one you haven't tried. Filipino oxtail adobo is four ingredients — soy sauce, vinegar, garlic, pepper — and the meat is never boiled first. Boiling and draining pours the gelatin and the fat down the sink, which is the whole reason to cook oxtail. Instead you sear it hard, braise it in the adobo itself, and reduce the sauce at the end until it stops running and starts clinging like a glaze. And the rule nobody outside a Filipino kitchen knows: when the vinegar goes in, do not stir it for eight to ten minutes. I'm Lorna, Tita Lorna, born in Pampanga and cooking for my family in California for thirty-one years.
Recipe (feeds 4 to 6 with rice): • 3 lb oxtail, THICK cut sections (ask for the meaty pieces near the body, not the skinny tips) • ½ cup soy sauce • ⅓ cup cane, white, apple cider or coconut vinegar • 1 whole head garlic, smashed • 2 tsp whole black peppercorns, lightly cracked • 4–5 bay leaves • 1 onion, quartered • 2 cups water, added in stages • Optional: 1 tbsp brown sugar at the end (the eternal family argument)
Method:
Marinate the oxtail in the soy sauce, garlic, pepper and bay leaves 1 hour, or overnight. NOT in the vinegar.
Pat dry, reserve the marinade, and sear hard in a hot pot until deep brown on both sides. Work in two batches rather than crowding.
Onions 1 minute, then the reserved marinade and the vinegar.
DO NOT STIR. Let it boil 8 to 10 minutes so the vinegar cooks off and mellows.
Add 1 cup water, cover, and simmer very low for 2½ to 3 hours, checking every 40 minutes.
Lid OFF, heat up, reduce 20 minutes until the sauce coats the meat like a lacquer.
Taste. Sharp? 1 tbsp brown sugar. Salty? A splash of water. Serve over rice with the glaze poured onto the rice, a dipping dish of raw vinegar with garlic and chili, and sliced tomatoes on the side.
Best trick: cook it the day before, refrigerate overnight, lift the solid fat off in one sheet, then reheat and do the reduction. Keep that fat for frying rice.
Variations: coconut milk in the last 15 minutes (sa gata) · potatoes or pineapple · pressure cooker 45 minutes then reduce · same method works with beef short ribs, beef shank or pork hocks.
Leftovers keep 3 to 4 days and get better. Reheat in a pan with a splash of water. Day two: crisp the pulled meat in a hot pan and serve over garlic fried rice with an egg (adobo flakes).
If you already cook oxtail — Jamaican, Hawaiian, smothered, Chinese — tell me how your family makes it. I want to try yours. And the eternal question: sugar in the adobo, yes or no? Next video: lumpiang shanghai, and the trick that keeps them crispy for hours.
