Description
That tub of store slaw was built to sit in a cold case, and the puddle in the bottom proves it. Here's the Memphis mustard slaw I make every Saturday for about two dollars a batch, crunchy enough to ride on top of a pulled pork sandwich without soaking the bun.
What you'll need (about 5 cups, tops 8 to 10 sandwiches):
- 1 1/2 lb green cabbage (half a big head or one small one), chopped fine
- 1 medium carrot, grated
- 1 1/2 tsp table salt (for wilting the cabbage)
- 1/4 cup apple cider vinegar
- 3 tbsp white sugar
- 3 tbsp yellow mustard
- 2 tbsp mayonnaise
- 3/4 tsp celery seed
- A pinch of black pepper, a couple dashes of hot sauce (optional)
1. Toss the cabbage and carrot with the salt in a colander over a bowl. Let it sit 1 hour.
2. Pour off the water, rinse under cold water, and dry well (salad spinner or rolled in a towel, don't wring it).
3. Stir the sugar into the vinegar until it runs clear, then whisk in the rest.
4. Toss with the cabbage, taste, adjust, and chill at least 1 hour.
Cost at 2026 store-brand prices: about $1.80 a batch (cabbage ~$1.17, everything else under 70 cents).

- What the label on a store tub actually lists, read out loud
- Why long ribbons fall out of a sandwich, and how to chop for Memphis
- The two-minute step that stops gritty dressing
- Why mustard, not mayonnaise, carries a Memphis slaw
- How the sandwich gets built, and why the slaw never goes near the pit
- Keeping slaw cold, and what I'd tell my mother now
- The one-hour trick that keeps the puddle out of your bowl, and a test you can do tonight
Food safety: keep slaw at 40°F or below, and out no more than 2 hours (1 hour above 90°F). Chop it on a clean board, never one that held raw meat. Pork is safe at 145°F with a 3-minute rest; pulled pork goes to about 195 to 205°F, for tenderness, not safety. Charcoal stays outdoors.

What does a tub of slaw cost at your store these days, and did your family put it on the sandwich or next to it?
